Ingredients
- 3 ½ cups all-purpose flour (or gluten-free blend)
- 1 cup pumpkin puree (fresh or canned)
- ½ cup granulated sugar (or coconut sugar)
- ½ cup milk (dairy or almond milk)
- ¼ cup unsalted butter, melted (or coconut oil)
- 2 large eggs
- 2 ¼ teaspoons instant yeast (or 1 packet active dry yeast)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- ¼ cup softened cream cheese (optional)
- 1 cup powdered sugar (for glaze)
Instructions
- Whisk together flour, sugar, cinnamon, nutmeg, and salt in a large bowl.
- In another bowl, mix pumpkin puree, warm milk, melted butter, eggs, vanilla, and yeast until smooth.
- Combine wet and dry ingredients to form a soft dough.
- Knead on a floured surface for 5–7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise 1–2 hours until doubled.
- Punch down dough, roll out to ½-inch thickness, and cut into desired shapes. Place on parchment-lined baking sheet.
- Cover and let rise again for 30–45 minutes until puffy.
- Preheat oven to 350°F (175°C) and bake for 20–25 minutes until golden brown.
- Let cool, then drizzle with glaze made from cream cheese and powdered sugar or a simple vanilla glaze.
