Ingredients

  • For the cookie base:
  • 24 chocolate sandwich cookies, crushed into coarse crumbs
  • 1 cup unsalted butter, melted and cooled
  • 1 cup light brown sugar, packed

  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar

  • 3 tablespoons heavy cream
  • Optional garnish:
  • 1/2 cup whipped cream
  • Chocolate shavings or cocoa powder for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Crush chocolate sandwich cookies into coarse crumbs and set aside.
  3. In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth and glossy.
  4. Add eggs and vanilla extract; mix until fully combined.
  5. In a separate bowl, sift together flour, cocoa powder, baking soda, and salt.
  6. Gradually add dry ingredients to wet ingredients, mixing just until combined.
  7. Fold in crushed sandwich cookies.
  8. Scoop about 2 tablespoons of dough per cookie onto prepared baking sheets, spacing 2 inches apart.
  9. Flatten slightly with the back of a spoon.
  10. Bake for 9–11 minutes until edges are set. Cool completely on a wire rack.
  11. For the filling, beat softened butter for 3–4 minutes until light and fluffy.
  12. Gradually add powdered sugar and beat until smooth.
  13. Add melted chocolate, salt, and vanilla extract; beat until silky.
  14. Add heavy cream and whip 2–3 minutes until light and airy.
  15. Pipe or spoon filling onto cooled cookies.
  16. Garnish with whipped cream and chocolate shavings if desired.
  17. Chill for at least 30 minutes before serving to allow filling to set.
