Ingredients
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup cold unsalted butter, cut into cubes
1/4 cup sour cream
1 teaspoon fresh lemon juice
2 tablespoons ice water
4–5 assorted tomatoes, sliced 1/4 inch thick
2 garlic cloves, thinly sliced
1 teaspoon kosher salt
1/2 teaspoon dried oregano
1 cup shredded gouda cheese
1/4 teaspoon ground black pepper
1 tablespoon olive oil
Flaky sea salt, for garnish
Fresh basil leaves, for garnish
Instructions
- In a bowl, whisk flour and salt. Cut in butter until crumbly. Stir in sour cream, lemon juice, and ice water just until dough forms.
- Shape dough into a disk, wrap, and chill for at least 1 hour.
- Meanwhile, toss tomato slices with garlic, kosher salt, and oregano. Let sit 10 minutes, then drain on paper towels.
- Roll dough into a 12-inch circle on parchment paper. Transfer to baking sheet.
- Sprinkle gouda in the center, leaving a 2-inch border. Layer tomatoes and garlic over cheese. Fold edges over filling.
- Grind black pepper on top.
- Bake at 400°F for about 30 minutes until crust is golden and cheese is bubbly.
- Drizzle with olive oil, sprinkle flaky salt, and garnish with basil. Slice and serve.
