Ingredients
- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup water
- 1 can (15 oz) chili beans, drained
- 2 cups corn chips (such as Fritos)
- 1 1/2 cups shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup sour cream
- 2 tablespoons chopped green onions
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat and cook onions for 3–4 minutes until soft.
- Add garlic and cook for 1 minute.
- Add ground beef and cook until browned, breaking it apart. Drain excess fat.
- Stir in taco seasoning and water, then simmer for 5 minutes.
- Add chili beans and cook for another 3–4 minutes.
- Season with salt and pepper as needed.
- Layer corn chips in a serving dish or bowls.
- Spoon beef mixture over chips and top with shredded cheese.
- Add diced tomatoes, sour cream, and green onions.
- Serve immediately while warm.
