Ingredients

  • For the cookies:

  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • For the topping:
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
  • 1/2 cup kiwi slices
  • 1/2 cup mandarin orange segments
  • 1/2 cup raspberries

Instructions

  1. Preheat oven to 180°C and line baking sheets with parchment paper.
  2. Cream together butter and sugar until light and fluffy. Add egg, egg yolk, and vanilla extract, mixing well.
  3. In another bowl, whisk flour, cream of tartar, baking soda, and salt. Gradually mix into the wet ingredients to form a soft dough.
  4. Scoop dough into balls, flatten into thick discs, and place on baking sheets with space between each.
  5. Bake for 9–11 minutes until edges are set and centers remain soft. Cool completely.
  6. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla extract, mixing until fluffy.
  7. Spread frosting over cooled cookies.
  8. Top with fresh fruit, arranging as desired. Serve immediately or chill before serving.
