Garlic Butter Steak Bites and Potatoes is a one-pan comfort meal made with juicy, seared sirloin steak bites and crispy baby potatoes, all tossed in a rich garlic butter sauce. Perfect for weeknights when you need something hearty and satisfying fast.
Ingredients
1.5 lbs sirloin steak, cut into bite-sized pieces
1.5 lbs baby potatoes, halved or quartered
4 tablespoons butter, divided
2 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
- Heat a large skillet over medium heat. Add 2 tablespoons of butter and olive oil.
- Add the potatoes and season with salt, pepper, thyme, and rosemary. Cook for 10–12 minutes until golden and fork-tender. Remove from skillet and set aside.
- Add 1 tablespoon of butter to the skillet. Sear steak bites in a single layer for 2–3 minutes per side. Do not overcrowd. Remove and set aside once browned.
- Reduce heat and add the remaining tablespoon of butter. Sauté garlic for about 1 minute until fragrant.
- Return steak and potatoes to the skillet and toss to coat in garlic butter.
- Garnish with chopped parsley and serve immediately.

- Add red pepper flakes or cayenne for a spicy kick.
- Toss in chopped chives or basil for more herb flavor.
- Sauté bell peppers or mushrooms for extra veggies.
