Ingredients
- 1/4 cup ghee or butter, divided
- 1 tablespoon olive oil
- 1 lb Yukon gold potatoes, cut into 1/2 inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon sea salt, plus more to taste
- 1/4 teaspoon ground black pepper, plus more to taste
- 1 1/4 lb sirloin steak, cut into 1/2 inch cubes
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large skillet over medium heat. Add olive oil and 2 tablespoons of ghee or butter and let it melt.
- Add cubed potatoes to the skillet. Sprinkle garlic, thyme, oregano, salt, and pepper over them.
- Cook undisturbed for 2–3 minutes to form a crust, then stir and continue cooking for 8–10 minutes until golden and fork-tender.
- Remove potatoes from the pan and set aside.
- Increase heat to medium-high and add remaining ghee or butter.
- Add steak pieces in a single layer, season with salt and pepper, and sear for 2 minutes without stirring.
- Stir and cook another 1–2 minutes until browned on all sides.
- Return potatoes to the skillet and toss to combine and heat through.
- Taste and adjust seasoning as needed. Garnish with fresh parsley and serve.
