Description

Ingredients

  • 1/4 cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes, cut into 1/2 inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sea salt, plus more to taste
  • 1/4 teaspoon ground black pepper, plus more to taste
  • 1 1/4 lb sirloin steak, cut into 1/2 inch cubes
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat a large skillet over medium heat. Add olive oil and 2 tablespoons of ghee or butter and let it melt.
  2. Add cubed potatoes to the skillet. Sprinkle garlic, thyme, oregano, salt, and pepper over them.
  3. Cook undisturbed for 2–3 minutes to form a crust, then stir and continue cooking for 8–10 minutes until golden and fork-tender.
  4. Remove potatoes from the pan and set aside.
  5. Increase heat to medium-high and add remaining ghee or butter.
  6. Add steak pieces in a single layer, season with salt and pepper, and sear for 2 minutes without stirring.
  7. Stir and cook another 1–2 minutes until browned on all sides.
  8. Return potatoes to the skillet and toss to combine and heat through.
  9. Taste and adjust seasoning as needed. Garnish with fresh parsley and serve.
