Description

This Garlic Parmesan Chicken Meatloaf is a flavorful and comforting twist on classic meatloaf, made with ground chicken, Parmesan cheese, and savory seasonings. Topped with melty mozzarella and garlic butter, it’s a cozy dinner favorite that’s easy to prepare.


Ingredients

  • 2 lbs ground chicken
  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a loaf pan or baking dish.
  2. In a large bowl, mix ground chicken, Parmesan, panko, eggs, minced garlic, milk, salt, pepper, and Italian seasoning until just combined.
  3. Transfer the mixture to the prepared pan and shape evenly.
  4. In a small bowl, combine melted butter and garlic powder. Brush the mixture over the top of the meatloaf.
  5. Bake uncovered for 40 minutes.
  6. Sprinkle mozzarella cheese over the top and return to oven for 10–15 minutes, until the cheese is melted and golden and the meatloaf reaches 165°F (74°C) internally.
  7. Let rest for 10 minutes before slicing. Top with chopped fresh parsley and serve.

Notes

  • Ground turkey can be substituted for chicken with similar results.
  • Don’t overmix the meat to keep the texture tender.
  • Use a meat thermometer to ensure it’s fully cooked.
  • Make ahead and refrigerate unbaked meatloaf for up to 1 day.
