This Garlic Parmesan Chicken Meatloaf is a flavorful and comforting twist on classic meatloaf, made with ground chicken, Parmesan cheese, and savory seasonings. Topped with melty mozzarella and garlic butter, it’s a cozy dinner favorite that’s easy to prepare.
Ingredients
- 2 lbs ground chicken
- 1 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 2 large eggs
- 4 cloves garlic, minced
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons melted butter
- 1 teaspoon garlic powder
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a loaf pan or baking dish.
- In a large bowl, mix ground chicken, Parmesan, panko, eggs, minced garlic, milk, salt, pepper, and Italian seasoning until just combined.
- Transfer the mixture to the prepared pan and shape evenly.
- In a small bowl, combine melted butter and garlic powder. Brush the mixture over the top of the meatloaf.
- Bake uncovered for 40 minutes.
- Sprinkle mozzarella cheese over the top and return to oven for 10–15 minutes, until the cheese is melted and golden and the meatloaf reaches 165°F (74°C) internally.
- Let rest for 10 minutes before slicing. Top with chopped fresh parsley and serve.
Notes
- Ground turkey can be substituted for chicken with similar results.
- Don’t overmix the meat to keep the texture tender.
- Use a meat thermometer to ensure it’s fully cooked.
- Make ahead and refrigerate unbaked meatloaf for up to 1 day.
- Freezes well either before or after baking.
