Description

This Garlic Parmesan Roasted Loin is a tender, juicy roast with a golden crust of garlic, cheese, and herbs. It’s an easy, flavorful main dish perfect for both weeknights and special occasions.


Ingredients

  • 3 lb loin roast
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon fresh parsley, finely chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a roasting pan or baking dish.
  2. Pat the loin roast dry and place it in the prepared pan.
  3. In a small bowl, mix olive oil, garlic, Parmesan, Italian seasoning, salt, pepper, and paprika.
  4. Spread the mixture over the roast, pressing it gently to coat all sides.
  5. Roast uncovered for 60 to 75 minutes, or until the internal temperature reaches 145°F (63°C).
  6. If the crust browns too quickly, loosely cover with foil.
  7. Remove from oven and let rest for 10 minutes before slicing.
  8. Garnish with fresh parsley if desired.

  • Brush with honey or mustard glaze during the final 10 minutes for a flavor twist.
