Ingredients
- 3 lb loin roast
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 3/4 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon fresh parsley, finely chopped (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a roasting pan or baking dish.
- Pat the loin roast dry and place it in the prepared pan.
- In a small bowl, mix olive oil, garlic, Parmesan, Italian seasoning, salt, pepper, and paprika.
- Spread the mixture over the roast, pressing it gently to coat all sides.
- Roast uncovered for 60 to 75 minutes, or until the internal temperature reaches 145°F (63°C).
- If the crust browns too quickly, loosely cover with foil.
- Remove from oven and let rest for 10 minutes before slicing.
- Garnish with fresh parsley if desired.
