Ingredients
- 2 tablespoons olive oil
- 1 small yellow onion, finely diced (about 1 cup)
- 3 to 4 garlic cloves, minced
- 1 pound (450 g) fresh spinach, rinsed and dried
- ¼ to ½ teaspoon kosher salt, to taste
- ¼ teaspoon black pepper
- 1 to 2 teaspoons fresh lemon juice (optional)
- Pinch of red pepper flakes or 2 tablespoons grated Parmesan (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook for 3–4 minutes, stirring often, until soft and lightly golden.
- Stir in minced garlic and cook for about 30 seconds, just until fragrant.
- Add spinach in batches, tossing gently as it wilts. Cook for 2–3 minutes until all spinach is wilted and glossy.
- Remove from heat and season with salt, pepper, and optional lemon juice.
- Taste and adjust seasoning. Serve immediately with optional red pepper flakes or Parmesan if desired.
