Ingredients

  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced (about 1 cup)
  • 3 to 4 garlic cloves, minced
  • 1 pound (450 g) fresh spinach, rinsed and dried
  • ¼ to ½ teaspoon kosher salt, to taste
  • ¼ teaspoon black pepper
  • 1 to 2 teaspoons fresh lemon juice (optional)
  • Pinch of red pepper flakes or 2 tablespoons grated Parmesan (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook for 3–4 minutes, stirring often, until soft and lightly golden.
  3. Stir in minced garlic and cook for about 30 seconds, just until fragrant.
  4. Add spinach in batches, tossing gently as it wilts. Cook for 2–3 minutes until all spinach is wilted and glossy.
  5. Remove from heat and season with salt, pepper, and optional lemon juice.
  6. Taste and adjust seasoning. Serve immediately with optional red pepper flakes or Parmesan if desired.
