Description

Ingredients

2 large eggs

4 large Russet potatoes, peeled and grated

1 teaspoon salt

1 small onion, grated

1/4 cup all-purpose flour

Oil for frying (vegetable or canola oil recommended)


Instructions

  1. Place the grated potatoes into a flour sack towel and wring out as much water as possible.
  2. In a large bowl, mix together the grated onion, eggs, salt, flour, and potatoes until well combined.
  3. Heat a thin layer of oil in a skillet over medium-high heat.
  4. Drop about ½ cup of the mixture into the hot skillet and flatten slightly to form a pancake.
  5. Fry for 2–3 minutes on each side or until golden brown and crispy.
  6. Transfer the cooked pancakes to a paper towel-lined plate to drain.
  7. Serve hot with sour cream, applesauce, or your favorite toppings.
