Description
Golden Crust Garlic Rosemary Focaccia Muffins are a muffin-sized twist on classic focaccia bread—soft inside, crispy on top, and infused with olive oil, garlic, and herbs. Perfect as a snack, side, or party-ready bread bite.
Ingredients
- 1.1 lb all-purpose flour
- 2 tsp salt
- 2 tsp instant yeast
- 1 tsp sugar
- 2 cups warm water
- 3 tbsp extra virgin olive oil (plus extra for drizzling)
- Optional toppings: fresh rosemary, basil pesto, cherry tomatoes, olives, oregano, salt to taste
Instructions
- Whisk flour and salt in a large bowl.
- Mix warm water with sugar and yeast. Let sit briefly if using active dry yeast.
- Pour yeast mixture into flour and stir until combined. Dough will be sticky.
- Drizzle 1 tbsp olive oil over dough, cover bowl, and refrigerate for 10–14 hours.
- Next day, brush muffin tin with olive oil and portion dough evenly into cups.
- Cover and let rise in a warm spot for about 1 hour.
- Preheat oven to 425°F (220°C). Drizzle oil on top of risen muffins and dimple with oiled fingers.
- Add toppings and sprinkle with salt.
- Bake for 18–23 minutes until golden and crisp. Cool on wire rack.
- Use a toothpick to release muffins if needed. Serve warm or store for later.
Notes
- Top with garlic oil, sun-dried tomatoes, cheese, or caramelized onions for variety.
- Use dried herbs when fresh aren’t available.
- Add shredded cheese inside the dough for cheesy centers.
- Gluten-free flour blends can be used (with xanthan gum for best texture).
