Ingredients
1 large tart cooking apple (like Granny Smith), peeled and diced
1/3 cup packed brown sugar
1 tsp ground cinnamon
1 1/2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1 cup granulated sugar
1/3 cup unsalted butter, softened
2 large eggs, lightly beaten
1/2 cup whole milk
1 tsp vanilla extract
For the sour cream glaze: 3 tbsp sour cream, 1/2 tsp vanilla extract, 3/4 cup powdered sugar, splash of milk to thin if needed
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×4-inch loaf pan; optionally line with parchment paper.
- Toss diced apples with brown sugar and cinnamon; set aside.
- Whisk together flour, baking powder, and salt in a bowl.
- Cream granulated sugar and butter until smooth in a large bowl. Beat in eggs, milk, and vanilla extract until combined.
- Gradually stir in dry ingredients until just mixed; avoid overmixing.
- Pour half the batter into the loaf pan, spoon half the apple mixture on top. Repeat with remaining batter and apples.
- Use a knife to gently swirl the apple mixture through the batter creating a marbled effect.
- Bake for about 1 hour, or until a toothpick inserted in center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- Whisk sour cream, vanilla, and powdered sugar for the glaze; add milk if needed to thin. Drizzle over cooled loaf.
