Ingredients
- 3 large garlic cloves (about 15 g), peeled
- 200 ml vegetable oil
- 100 ml whole milk (cold)
- 1/2 teaspoon salt (about 3 g)
- Juice of 1/2 lemon (about 15 ml)
Instructions
- Peel the garlic cloves and remove the inner green germ if desired for a milder flavor.
- Add cold milk, garlic cloves, and salt to a blender.
- Blend on medium speed until combined.
- While blending, slowly pour in the vegetable oil in a thin, steady stream to emulsify.
- Continue blending until thick, smooth, and creamy.
- Add lemon juice and blend briefly to incorporate.
- Taste and adjust salt if needed.
- Transfer to an airtight container and refrigerate at least 30 minutes before serving.

- Milk must be cold for proper emulsification.
- Pour oil slowly to prevent separation.
