Description

These Greek-style grilled chicken tenders are juicy, zesty, and packed with Mediterranean flavor from a simple marinade of olive oil, lemon, garlic, and oregano. They’re quick to prepare and perfect for serving with rice, salad, or pita.

Ingredients

  • 1 lb chicken tenders
  • 2 tbsp olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 tsp dried oregano (optional)

Instructions

  1. Place the chicken tenders in a bowl or resealable bag.
  2. Whisk together olive oil, lemon juice, garlic, salt, pepper, and oregano.
  3. Pour the marinade over the chicken and mix to coat well. Marinate for at least 30 minutes, or up to 2 hours in the fridge.
  4. Preheat grill or grill pan to medium-high heat.
  5. Grill the chicken tenders for 3–4 minutes per side, until golden and cooked through (internal temperature of 165°F).
  6. Let rest a few minutes before serving.

Notes

  • Use chicken thighs or breasts cut into strips as an alternative.
  • Add chopped fresh herbs (like parsley or dill) for added freshness.
  • Sprinkle with feta or a drizzle of extra lemon juice when serving.
  • For a kick, add red pepper flakes to the marinade.
