Description

This Grilled Cheese Burrito with Beef combines the best of a cheesy grilled sandwich and a loaded beef burrito. Featuring seasoned ground beef, creamy sauces, and a crispy cheddar crust, it’s a rich and satisfying Tex-Mex-inspired meal.


Ingredients

  • 1 lb ground beef (80/20)
  • 1 taco seasoning packet
  • ½ cup water
  • 1 tbsp olive oil
  • 1 small onion, diced
  • Salt, to taste
  • 4 large flour tortillas
  • 1 ½ cups shredded cheddar cheese
  • ½ cup nacho cheese sauce
  • ½ cup sour cream
  • ¼ cup spicy mayo
  • 1 cup cooked rice (optional)
  • ¼ cup sliced jalapeños or pickled jalapeños (optional)

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning and water to the beef. Simmer until thickened.
  3. In a separate pan, sauté diced onions in olive oil until soft and golden. Season with salt.
  4. Warm tortillas to make them pliable.
  5. Assemble each burrito by layering beef, sautéed onions, rice (if using), sour cream, spicy mayo, nacho cheese sauce, and jalapeños (if using) in the center of a tortilla.
  6. Roll each tortilla tightly into a burrito.
  7. Sprinkle shredded cheddar on the outside of the burritos.
  8. Grill seam-side down in a non-stick skillet until cheese is golden and crispy, then flip and cook the other side.
  9. Slice and serve hot with extra dipping sauce if desired.
