Description

A light and creamy no-bake dessert made with crushed pineapple, fluffy whipped topping, marshmallows, and coconut for a refreshing tropical treat.


Ingredients

  • 1 can (20 ounces) crushed pineapple in juice, undrained
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 container (8 ounces) whipped topping, thawed
  • 1 cup mini marshmallows
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup maraschino cherries, drained and halved (optional)

Instructions

  1. In a large mixing bowl add the crushed pineapple with its juice.
  2. Sprinkle the instant vanilla pudding mix over the pineapple and stir until the mixture thickens.
  3. Gently fold in the whipped topping until the mixture becomes smooth and fluffy.
  4. Add the mini marshmallows, shredded coconut, chopped nuts, and maraschino cherries if using.
  5. Stir gently until all ingredients are evenly combined.
  6. Cover the bowl and refrigerate for at least 1 hour so the dessert can thicken and the flavors blend.
  7. Serve chilled and garnish with extra cherries or coconut if desired.
