Ingredients
- 1 can (20 ounces) crushed pineapple in juice, undrained
- 1 package (3.4 ounces) instant vanilla pudding mix
- 1 container (8 ounces) whipped topping, thawed
- 1 cup mini marshmallows
- 1/2 cup shredded sweetened coconut
- 1/2 cup chopped walnuts or pecans
- 1/2 cup maraschino cherries, drained and halved (optional)
Instructions
- In a large mixing bowl add the crushed pineapple with its juice.
- Sprinkle the instant vanilla pudding mix over the pineapple and stir until the mixture thickens.
- Gently fold in the whipped topping until the mixture becomes smooth and fluffy.
- Add the mini marshmallows, shredded coconut, chopped nuts, and maraschino cherries if using.
- Stir gently until all ingredients are evenly combined.
- Cover the bowl and refrigerate for at least 1 hour so the dessert can thicken and the flavors blend.
- Serve chilled and garnish with extra cherries or coconut if desired.
