Description
Cowboy Butter Chicken is a rich and flavorful dish featuring tender pan-seared chicken breasts simmered in a creamy butter sauce infused with garlic, Dijon mustard, fresh herbs, lemon juice, and a touch of spice.
Ingredients
- 4 boneless, skinless chicken breasts (6–7 ounces each)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika (smoked or sweet)
- 1 tablespoon olive oil
- 1/2 cup unsalted butter, softened
- 4 garlic cloves, finely minced
- 1 teaspoon Dijon mustard
- 1 teaspoon red pepper flakes
- 1 tablespoon fresh parsley, finely chopped (plus extra for garnish)
- 1 teaspoon fresh dill, finely chopped
- 2 tablespoons freshly squeezed lemon juice
- 1/2 cup chicken broth
- 1/2 cup heavy cream
Instructions
- Pat chicken breasts dry and season evenly with salt, black pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden brown. Remove and set aside.
- Reduce heat to medium and add butter to the skillet. Once melted, stir in minced garlic and cook 1–2 minutes until fragrant.
- Add Dijon mustard, red pepper flakes, parsley, and dill. Stir to combine.
- Pour in lemon juice, chicken broth, and heavy cream. Stir and scrape up browned bits from the pan. Simmer 2–3 minutes until slightly thickened.
- Return chicken to skillet, spoon sauce over top, cover, and cook 8–10 minutes until internal temperature reaches 165°F (74°C).
- Garnish with additional parsley and serve warm.
Notes
- Use a meat thermometer to ensure chicken reaches 165°F.
- Simmer sauce a few extra minutes if thicker consistency is desired.
- Half-and-half can replace heavy cream for a lighter option.
- Boneless skinless chicken thighs can be substituted.
- Store leftovers refrigerated up to 3 days.
