Ingredients
- For the chicken:
- 1½ pounds boneless skinless chicken breasts (3–4 pieces)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- ⅓ cup grated parmesan cheese
- ⅓ cup breadcrumbs
- ½ teaspoon cracked black pepper
- ½ to ¾ teaspoon sea salt
- For the potatoes:
- 2 pounds red potatoes, cut into bite-sized pieces
- 1–2 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons grated parmesan cheese
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- For the green beans:
- 1 pound fresh green beans, trimmed
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 tablespoon grated parmesan cheese (optional)
- ¼–½ teaspoon sea salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 425°F (220°C) and line a large sheet pan with parchment paper or lightly grease it.
- Toss red potatoes with olive oil, garlic, parmesan, salt, and pepper. Spread on one-third of the pan and roast for 10–15 minutes.
- Mix chicken with olive oil, garlic, parmesan, breadcrumbs, salt, and pepper until coated.
- Remove pan, push potatoes aside, and place chicken on another third of the pan.
- Toss green beans with olive oil, garlic, salt, pepper, and parmesan if using. Spread on remaining space.
- Bake for about 25 minutes until chicken reaches 165°F (74°C).
- Broil 3–5 minutes at the end for crispier potatoes if desired.
- Let chicken rest 5 minutes before serving.

- Substitute broccoli or asparagus for green beans.
- Add Italian seasoning or paprika for extra flavor.
- Use gluten-free breadcrumbs for a gluten-free option.
