Ingredients
- Marinated Chicken:
- 4 boneless, skinless chicken thighs
- 1 tablespoon lime juice
- 1 tablespoon avocado oil

- 1 teaspoon ground cumin

- 1/4 teaspoon black pepper
- Street Corn Mix:
- 1 cup sweet corn kernels
- 1/4 cup red onion, sliced
- 1/2 cup sour cream
- 2 tablespoons mayonnaise
- 1/2 cup cotija cheese, crumbled
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon lime juice
- For Serving:
- 3 cups cooked rice

Instructions
- In a bowl, mix lime juice, avocado oil, chili powder, cumin, garlic, salt, and pepper. Add chicken and coat well. Marinate for 15–30 minutes.
- Heat a skillet over medium-high heat and cook chicken for 8–10 minutes per side until fully cooked. Let rest, then slice.
- In a bowl, combine corn, red onion, sour cream, mayonnaise, cotija cheese, chili powder, salt, pepper, and lime juice. Mix well.
- Reheat rice if needed and fluff with a fork.
- Assemble bowls by adding rice, sliced chicken, and street corn mixture.
- Garnish with cilantro, lime wedges, extra cheese, and sour cream if desired.
- Serve immediately.
