Ingredients
- 1 pie crust (homemade or store-bought, blind baked)
- 1¾ cups whole milk
- 1 cup canned coconut milk
- ¾ cup granulated sugar
- ¼ tsp salt
- 3 egg yolks
- ¼ cup cornstarch
- 2 tbsp unsalted butter
- 1½ tsp vanilla extract
- 1 cup shredded or flaked coconut
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- ½ tsp vanilla extract (for whipped cream)
- ¼ cup toasted coconut (for garnish)
Instructions
- Preheat oven and blind bake your crust. Let it cool completely.
- Toast coconut in a dry skillet over medium-low heat until golden. Set aside.
- In a saucepan, heat whole milk, coconut milk, sugar, and salt until just simmering.
- In a separate bowl, whisk egg yolks with cornstarch and a splash of milk to make a slurry.
- Temper the eggs by slowly whisking in some hot milk, then return all to the saucepan.
- Cook over medium heat, stirring constantly until thickened into a custard.
- Remove from heat and stir in butter, vanilla, and shredded coconut.
- Pour filling into cooled crust, cover with plastic wrap (touching surface), and chill 4 hours or overnight.
- Whip cream with powdered sugar and vanilla until soft peaks form. Spread or pipe on pie.
- Top with toasted coconut and serve chilled.
Notes
- Use graham cracker crust for a no-bake alternative.
- Add coconut extract for extra coconut flavor.
- Swap whipped cream for meringue if desired.
- For richness, replace part of the milk with heavy cream.
- Do not freeze—best served fresh from the fridge.
