Description

These Homemade Funfetti Marshmallow Popcorn Treats are a festive, no-bake dessert packed with gooey marshmallows, crunchy popcorn, and colorful sprinkles. They’re quick to make and perfect for parties, snacks, or a fun surprise any time of year.

Ingredients

  • 3 tablespoons butter
  • 7 cups freshly popped popcorn (unpopped kernels removed)
  • 50 regular-size marshmallows
  • 1 teaspoon vanilla extract
  • 1 scoop cake batter protein powder (optional)
  • 1/4 cup funfetti sprinkles
  • Optional: melted white chocolate for drizzling

Instructions

  1. Pop the popcorn using your preferred method and measure out 7 cups. Remove any unpopped kernels.
  2. In a large saucepan over low heat, melt the butter. Add the marshmallows and stir continuously until melted and smooth.
  3. Remove from heat and stir in the vanilla extract and protein powder (if using).
  4. Pour the marshmallow mixture over the popcorn in a large mixing bowl and stir gently to coat evenly.
  5. Add funfetti sprinkles and stir briefly to distribute.
  6. Press the mixture into a parchment-lined baking dish using greased hands or a spatula.
  7. If desired, drizzle with melted white chocolate and top with more sprinkles.
  8. Let cool for about 30 minutes, then cut into squares or break into clusters and serve.
