Description

Ingredients

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 cups broccoli florets

2 tablespoons olive oil

Salt and pepper to taste

1/4 cup honey

1/4 cup low-sodium soy sauce

1 tablespoon apple cider vinegar

3 cloves garlic, minced

1 tablespoon cornstarch mixed with 2 tablespoons cold water

Toasted sesame seeds for garnish (optional)

Cooked white or brown rice for serving (optional)


Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper, then cook for 6–7 minutes until golden and cooked through. Remove and set aside.
  3. Add remaining olive oil to the skillet. Stir-fry broccoli for 3–4 minutes until bright green and tender-crisp.
  4. In a small bowl, whisk together honey, soy sauce, vinegar, and garlic.
  5. Return chicken to skillet with broccoli. Pour in sauce and stir to combine.
  6. Once sauce simmers, stir in cornstarch slurry. Cook 1–2 minutes until sauce thickens into a glossy glaze.
  7. Toss to coat everything evenly. Serve over rice and garnish with sesame seeds if desired.
