Ingredients
1.5 lbs boneless, skinless chicken breast, cubed
2 tablespoons cornstarch (optional)
Kosher salt and black pepper, to taste
1 tablespoon olive oil
1 tablespoon unsalted butter
4 cloves garlic, minced
1/3 cup honey
1/4 cup low-sodium chicken stock
1 tablespoon lemon juice
1 teaspoon hot sauce (optional, like Sriracha)
1/4 teaspoon red chili flakes (optional)
1 tablespoon fresh parsley, chopped
Instructions
- In a bowl, toss cubed chicken with cornstarch, salt, and pepper.
- Heat olive oil and butter in a skillet over medium-high heat. Cook chicken in batches for 6–8 minutes until golden and cooked through. Set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Pour in honey, chicken stock, lemon juice, and hot sauce. Stir and simmer for 3–5 minutes until sauce thickens slightly.
- Return chicken to the pan, tossing to coat in sauce.
- Remove from heat, sprinkle with red chili flakes and parsley. Serve hot over rice or with veggies.
Notes
- Use chicken thighs for a juicier alternative.
- Add bell peppers or snap peas for extra veggies.
- Maple syrup or agave can replace honey for a twist.
- Double the chili flakes for more heat.
- Substitute arrowroot for a gluten-free version.
