Description

Tender roasted carrots glazed with honey and garlic, finished with creamy feta and fresh dill for a sweet, savory, and herbaceous side dish.


Ingredients

  • 1 lb carrots, washed and peeled
  • 1 tablespoon honey (plus more for serving)
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried dill or 1 tablespoon fresh dill
  • 1/4 teaspoon salt
  • Black pepper, to taste
  • 1/4 cup feta cheese, crumbled
  • Fresh dill, for garnish

Instructions

  1. Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Trim and cut carrots diagonally into 1½-inch pieces, slicing thicker ones lengthwise for even cooking.
  3. In a bowl, toss carrots with olive oil, honey, garlic, dill, salt, and black pepper until evenly coated.
  4. Transfer carrots to the baking sheet using a slotted spoon, leaving excess liquid behind.
  5. Spread in a single layer and roast for 20–25 minutes until tender and caramelized.
  6. During the last 5–10 minutes, brush reserved liquid over carrots for extra flavor.
  7. Remove from oven and transfer to a serving dish.
  8. Sprinkle with crumbled feta and garnish with fresh dill.
  9. Drizzle additional honey if desired and serve immediately.

  • Do not overcrowd the pan to allow proper caramelization.
