Ingredients
- 1 lb carrots, washed and peeled
- 1 tablespoon honey (plus more for serving)
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon dried dill or 1 tablespoon fresh dill
- 1/4 teaspoon salt
- Black pepper, to taste
- 1/4 cup feta cheese, crumbled
- Fresh dill, for garnish
Instructions
- Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.
- Trim and cut carrots diagonally into 1½-inch pieces, slicing thicker ones lengthwise for even cooking.
- In a bowl, toss carrots with olive oil, honey, garlic, dill, salt, and black pepper until evenly coated.
- Transfer carrots to the baking sheet using a slotted spoon, leaving excess liquid behind.
- Spread in a single layer and roast for 20–25 minutes until tender and caramelized.
- During the last 5–10 minutes, brush reserved liquid over carrots for extra flavor.
- Remove from oven and transfer to a serving dish.
- Sprinkle with crumbled feta and garnish with fresh dill.
- Drizzle additional honey if desired and serve immediately.
