Ingredients

  • 600 g potatoes
  • 6 eggs
  • 1/2 teaspoon baking powder
  • Salt to taste
  • Olive oil, as needed for frying and cooking

Instructions

  1. Peel the potatoes, wash them thoroughly, and dry them well with paper towels. Slice them into thin, even pieces.
  2. Heat a generous amount of olive oil in a frying pan over medium heat. Add the sliced potatoes and fry gently, stirring occasionally, until soft and tender but not crispy.
  3. Remove the potatoes from the pan and place them on a plate lined with paper towels to absorb excess oil.
  4. In a large mixing bowl, crack the eggs and beat them until smooth. Add the baking powder and salt, then mix well.
  5. Add the cooked potatoes to the egg mixture and gently stir until the potatoes are evenly coated.
  6. Heat a clean frying pan with a small drizzle of olive oil over medium heat. Pour in the potato and egg mixture and spread it evenly.
  7. Cook undisturbed until the bottom is set and lightly golden.
  8. Place a flat plate over the pan and carefully flip the omelette onto the plate. Slide it back into the pan to cook the other side.
  9. Cook until fully set and golden on both sides.
  10. Transfer to a serving plate, let it rest briefly, then slice and serve warm or at room temperature.
