Ingredients

  • 4 ounces (113 grams) semi-sweet chocolate, finely chopped
  • 1/2 cup (120 ml) heavy whipping cream (at least 36% milk fat)

Instructions

  1. Chop the semi-sweet chocolate into small, even pieces and place it in a heatproof mixing bowl.
  2. Pour the heavy whipping cream into a microwave-safe measuring cup.
  3. Heat the cream in the microwave for 45 seconds to 1 minute, just until hot. Do not allow it to boil.
  4. Carefully pour the warm cream over the chopped chocolate.
  5. Let the mixture sit undisturbed for 2 to 3 minutes so the chocolate can soften.
  6. Begin stirring slowly from the center, continuing in one direction, until the chocolate is fully melted and the ganache is smooth.
  7. Allow the ganache to cool slightly before using as a glaze, or cool completely if using as a thicker topping or frosting base.
