Description

Elegant individual beef Wellingtons featuring tender beef fillets, savory mushroom duxelles, and golden puff pastry. Perfect for special occasions, holidays, or dinner parties.


Ingredients

  • 1 pound fresh mushrooms, sliced
  • 1/2 cup dry sherry
  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 1/4 cup chopped parsley
  • 6 (8-ounce) beef tenderloin fillets
  • 1 (17.5-ounce) package frozen puff pastry, partially thawed

Instructions

  1. In a skillet, cook mushrooms, sherry, onion, butter, and parsley over medium heat, stirring often, until mushrooms are browned and liquid evaporates (15–20 minutes). Cool mixture.
  2. Spoon mushroom mixture onto each beef fillet.
  3. Cut puff pastry sheets into 3 equal rectangles, for 6 total. Roll each to 1/4-inch thickness.
  4. Place a beef fillet in the center of each piece of pastry. Fold and seal edges tightly.
  5. Arrange wrapped Wellingtons on a baking sheet. Cover with plastic wrap and refrigerate until ready to bake.
  6. Preheat oven to 425°F (220°C). Bake for 25 minutes, until pastry is golden and internal temperature of beef reaches 130°F (54°C) for medium-rare.
  7. Let rest 5 minutes before serving.

  • Sear fillets briefly on all sides before wrapping for more flavor and to lock in juices.
