Description

This irresistible Spanish Rice (Arroz Rojo Casero) is a comforting, flavorful side dish made with pantry staples. Lightly toasted rice is simmered in tomato sauce, green chiles, and broth for a fluffy, savory result that’s perfect with any meal.


Ingredients

  • 2 cups long-grain white rice
  • 2 tablespoons vegetable oil
  • 1/4 white onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1 small tomato, finely blended
  • 2 1/2 cups chicken broth or water
  • 1/4 cup chopped green chiles
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. In a medium pot, heat the vegetable oil over medium heat. Add the rice and stir frequently until lightly golden and toasted.
  3. Add chopped onion and garlic, and cook for another minute until fragrant.
  4. Stir in the tomato sauce, blended tomato, and green chiles until evenly combined.
  5. Pour in chicken broth (or water), salt, and cumin. Bring to a gentle boil.
  6. Reduce heat to low, cover, and simmer for 20–25 minutes or until liquid is absorbed and rice is tender.
  7. Turn off the heat and let the rice rest, covered, for 5 minutes. Fluff with a fork before serving.
