Description

Ingredients

  • 2 cups corn kernels (fresh, canned drained, or frozen thawed)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley (optional)
  • 1/3 cup vegetable oil for frying

Instructions

  1. In a large bowl, combine corn kernels, shredded cheddar, and grated Parmesan cheese.
  2. Add flour, baking powder, salt, black pepper, and garlic powder. Stir to coat evenly.
  3. In a separate bowl, whisk together eggs and milk until smooth.
