Description

Italian Tiramisu Cake is an elegant layered dessert featuring light sponge cake soaked in coffee syrup and filled with luscious mascarpone cream, finished with a delicate dusting of cocoa powder.


Ingredients

  • 6 large eggs, room temperature
  • 180 g granulated sugar
  • 1 teaspoon vanilla extract
  • 150 g all-purpose flour
  • 30 g cornstarch
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 240 ml strong brewed espresso or coffee, cooled
  • 2 tablespoons granulated sugar (for soak)
  • 500 g mascarpone cheese, chilled
  • 400 ml heavy whipping cream, cold
  • 120 g powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 2 tablespoons unsweetened cocoa powder (for dusting)

Instructions

  1. Preheat oven to 170°C (340°F). Grease and line three 20 cm (8-inch) round cake pans.
  2. Beat eggs and sugar on high speed for 6–8 minutes until pale and tripled in volume. Stir in vanilla.
  3. Sift together flour, cornstarch, baking powder, and salt. Gently fold into egg mixture in batches.
  4. Divide batter evenly among pans and bake 18–22 minutes until tops spring back and a toothpick comes out clean.
  5. Cool in pans 10 minutes, then transfer to a wire rack to cool completely.
  6. Mix cooled espresso with 2 tablespoons sugar until dissolved.
  7. Whip heavy cream to soft peaks. In another bowl, mix mascarpone, powdered sugar, and vanilla until smooth. Gently fold whipped cream into mascarpone mixture.
  8. Place first sponge layer on serving plate. Brush with coffee soak and spread mascarpone cream evenly on top.
  9. Repeat with second layer.
  10. Top with final sponge layer, brush with remaining coffee, and frost entire cake with remaining mascarpone cream.
  11. Refrigerate at least 4 hours or overnight.
  12. Dust evenly with cocoa powder before serving.
