Description

Juicy Cuban Mojo Marinated Chicken made with a bright citrus and garlic marinade of orange juice, lime juice, olive oil, and spices, resulting in tender, flavorful chicken perfect for roasting or grilling.


Ingredients

  • 2 pounds boneless chicken thighs or chicken breast
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tablespoon minced garlic (about 4 cloves)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 tablespoon chopped fresh cilantro (optional)
  • 1 teaspoon orange zest
  • 1 teaspoon lime zest

Instructions

  1. In a large bowl whisk together orange juice, lime juice, olive oil, minced garlic, cumin, oregano, salt, black pepper, paprika, onion powder, orange zest, and lime zest until well combined.
  2. Place the chicken in a resealable bag or shallow dish.
  3. Pour the marinade over the chicken and coat all pieces evenly.
  4. Cover or seal and refrigerate for at least 2 hours or up to 8 hours for deeper flavor.
  5. Preheat the oven to 400°F (200°C) or preheat a grill to medium-high heat.
  6. Remove the chicken from the marinade and place on a baking sheet or grill grates.
  7. Roast for 25–30 minutes or grill for about 6–7 minutes per side until fully cooked.
  8. Ensure the internal temperature reaches 165°F (74°C).
  9. Allow the chicken to rest for 5 minutes before slicing.
  10. Garnish with chopped fresh cilantro if desired and serve warm.

  • Boneless chicken thighs produce the juiciest result.
  • For a spicier version add crushed red pepper flakes or chopped chili to the marinade.
  • Increase garlic to 2 tablespoons for a stronger garlic flavor.
