Juicy Cuban Mojo Marinated Chicken made with a bright citrus and garlic marinade of orange juice, lime juice, olive oil, and spices, resulting in tender, flavorful chicken perfect for roasting or grilling.
Ingredients
- 2 pounds boneless chicken thighs or chicken breast
- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 1 tablespoon minced garlic (about 4 cloves)
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1 tablespoon chopped fresh cilantro (optional)
- 1 teaspoon orange zest
- 1 teaspoon lime zest
Instructions
- In a large bowl whisk together orange juice, lime juice, olive oil, minced garlic, cumin, oregano, salt, black pepper, paprika, onion powder, orange zest, and lime zest until well combined.
- Place the chicken in a resealable bag or shallow dish.
- Pour the marinade over the chicken and coat all pieces evenly.
- Cover or seal and refrigerate for at least 2 hours or up to 8 hours for deeper flavor.
- Preheat the oven to 400°F (200°C) or preheat a grill to medium-high heat.
- Remove the chicken from the marinade and place on a baking sheet or grill grates.
- Roast for 25–30 minutes or grill for about 6–7 minutes per side until fully cooked.
- Ensure the internal temperature reaches 165°F (74°C).
- Allow the chicken to rest for 5 minutes before slicing.
- Garnish with chopped fresh cilantro if desired and serve warm.
Notes
- Boneless chicken thighs produce the juiciest result.
- For a spicier version add crushed red pepper flakes or chopped chili to the marinade.
- Increase garlic to 2 tablespoons for a stronger garlic flavor.
- The marinade also works well with seafood, turkey, or beef.
- Fresh citrus juice provides the best flavor compared to bottled juice.
