Description

Tender, juicy chicken bites marinated in lemon, garlic, and oregano, then pan-seared and finished with a light white wine reduction for a fresh and flavorful Mediterranean-inspired dish.

Ingredients

  • 3 tablespoons olive oil
  • 1 oz freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 3 garlic cloves, minced
  • 2.5 teaspoons oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 lb chicken breast, cut into 1-inch bite-sized chunks
  • 1/4 cup white wine

Instructions

  1. In a medium bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, salt, black pepper, and red pepper flakes.
  2. Add chicken pieces and toss to coat evenly. Cover and marinate for at least 30 minutes (or longer for deeper flavor).
  3. Heat a large skillet over medium-high heat and add the marinated chicken in a single layer.
  4. Cook for 5–7 minutes, stirring occasionally, until golden brown and fully cooked.
  5. Pour in white wine to deglaze the pan, scraping up browned bits.
  6. Let simmer for 2–3 minutes until slightly reduced.
  7. Remove from heat and serve immediately.

Notes

  • Marinate longer for stronger flavor.
  • Chicken thighs can be used for extra juiciness.
  • Add vegetables like zucchini, peppers, or cherry tomatoes for variation.
  • Substitute white wine with chicken broth if needed.
  • Top with feta cheese or fresh herbs for added flavor.
  • Store leftovers in the refrigerator for up to 3 days.
  • Freeze cooked chicken for up to 2 months.
  • Reheat gently in a skillet to maintain moisture.
