Description
Tender, juicy chicken bites marinated in lemon, garlic, and oregano, then pan-seared and finished with a light white wine reduction for a fresh and flavorful Mediterranean-inspired dish.
Ingredients
- 3 tablespoons olive oil
- 1 oz freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 3 garlic cloves, minced
- 2.5 teaspoons oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 lb chicken breast, cut into 1-inch bite-sized chunks
- 1/4 cup white wine
Instructions
- In a medium bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, salt, black pepper, and red pepper flakes.
- Add chicken pieces and toss to coat evenly. Cover and marinate for at least 30 minutes (or longer for deeper flavor).
- Heat a large skillet over medium-high heat and add the marinated chicken in a single layer.
- Cook for 5–7 minutes, stirring occasionally, until golden brown and fully cooked.
- Pour in white wine to deglaze the pan, scraping up browned bits.
- Let simmer for 2–3 minutes until slightly reduced.
- Remove from heat and serve immediately.
Notes
- Marinate longer for stronger flavor.
- Chicken thighs can be used for extra juiciness.
- Add vegetables like zucchini, peppers, or cherry tomatoes for variation.
- Substitute white wine with chicken broth if needed.
- Top with feta cheese or fresh herbs for added flavor.
- Store leftovers in the refrigerator for up to 3 days.
- Freeze cooked chicken for up to 2 months.
- Reheat gently in a skillet to maintain moisture.
