Soft, buttery keto pecan crescents with a delicate crumb and rich nutty flavor, perfect for holidays and low-carb diets.
Ingredients
- 1 cup finely chopped pecans
- 1/2 cup butter, softened
- 1/2 cup brown sugar replacement made with erythritol
- 1 large egg, at room temperature
- 1/2 teaspoon vanilla extract
- 2 cups almond flour
- 2 tablespoons coconut flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 ounces cream cheese, softened
- 1/2 cup powdered sweetener
- 1/2 teaspoon vanilla extract (for glaze)
- 4 tablespoons heavy whipping cream, plus more if needed
- Optional: keto sprinkles or additional finely chopped pecans
Instructions
- Preheat oven to 325°F and line two baking sheets with parchment paper or silicone mats.
- Finely chop the pecans.
- In a large bowl, beat softened butter with the sweetener until light and fluffy.
- Mix in the egg and vanilla extract.
- Add almond flour, coconut flour, baking powder, and salt; mix until a smooth dough forms.
- Gently stir in chopped pecans.
- Portion dough into 3/4-inch balls, roll, and shape into crescents.
- Place cookies on prepared baking sheets with space in between.
- Bake for 15–20 minutes, until edges are lightly golden.
- Let cookies cool completely on baking sheet to firm up.
- For glaze: beat cream cheese until smooth, mix in powdered sweetener and vanilla extract.
- Slowly beat in heavy whipping cream until glaze is thin and spreadable.
- Once cookies are cooled, spread glaze on top and add optional toppings.
Notes
- Cookies are soft out of the oven and firm up as they cool.
- Can be made without glaze and dusted with powdered sweetener.
- Dough can be frozen and baked later.
- Store at room temperature up to 5 days or refrigerate up to 10 days.
- Cookies freeze well for several months.
