Description

Key West Grilled Chicken is a citrusy‑sweet‑savory marinated chicken that’s grilled to juicy perfection. With notes of lime, honey, garlic, and soy, it captures a tropical summer vibe in every bite.

Ingredients

  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste
  • Optional: chopped cilantro or lime wedges for garnish

Instructions

  1. In a bowl, whisk together lime juice, olive oil, soy sauce, honey, garlic, and Dijon mustard to make the marinade.
  2. Place chicken in a resealable bag or shallow dish. Pour the marinade over it, seal, and refrigerate for at least 2 hours (or overnight for more flavor).
  3. Preheat grill (or grill pan) to medium‑high. Lightly oil the grates or pan.
  4. Remove chicken from marinade, letting excess drip off. Season with salt and pepper.
  5. Grill chicken for about 5‑6 minutes per side until cooked through and grill‑marks appear (internal temp 165°F / 75°C).
  6. Let chicken rest for 5 minutes before serving to allow juices to redistribute.
  7. Garnish with chopped cilantro and/or lime wedges for a fresh finish.

Notes

  • Swap lime juice for lemon juice if needed.
  • Add pineapple juice for a tropical sweetness kick.
  • If you want heat, stir in a pinch of chili flakes or cayenne.
  • Bone‑in, skin‑on thighs stay juicer if grilling.
  • Leftover grilled chicken works well in wraps, salads, or tacos.
