These Leftover Mashed Potato Cheese Puffs transform leftover mashed potatoes into crispy, cheesy bites that are soft on the inside and golden on the outside—perfect for snacking or as a tasty side dish.
Ingredients
- 2 cups leftover mashed potatoes (cold or room temperature)
- 1 cup shredded cheddar cheese (sharp or medium)
- 1/2 cup shredded mozzarella cheese
- 1 large egg
- 2 tablespoons all-purpose flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt to taste
- Black pepper to taste
- Cooking oil for frying or nonstick spray for baking
Instructions
- Place the mashed potatoes in a large bowl and stir until smooth.
- Add the cheddar cheese, mozzarella cheese, egg, flour, garlic powder, onion powder, salt, and pepper.
- Mix until the mixture is well combined and thick enough to scoop.
- For frying: Heat oil in a skillet over medium heat. Scoop small portions of the mixture into the hot oil and cook for 2–3 minutes per side, until golden and crisp. Remove and drain on paper towels.
- For baking: Preheat the oven to 400°F (200°C). Shape the mixture into small balls, place on a greased baking sheet, and bake for 18–22 minutes, turning halfway through, until golden.

- Add chopped green onions, parsley, or chives for extra flavor.
- Include a pinch of paprika or cayenne for a spicy twist.
