Description

Ingredients

  • 1 cup freshly squeezed lemon juice
  • 1 tablespoon finely grated lemon zest
  • 1 to 2 fresh jalapeños, finely minced (seeds removed for mild, included for more heat)
  • 1 3/4 ounces powdered fruit pectin (1 standard box)
  • 1 1/2 cups granulated sugar
  • 1/4 cup water

Instructions

  1. Finely mince jalapeños, adjusting for desired heat level by removing or keeping seeds.
  2. In a medium saucepan, combine lemon juice, zest, jalapeños, water, and pectin. Stir to dissolve pectin.
  3. Bring to a rolling boil over medium-high heat, stirring frequently.
  4. Add sugar all at once and stir until dissolved.
  5. Return to a rolling boil and cook for 1–2 minutes, stirring constantly until mixture slightly thickens.
  6. Remove from heat and skim any foam from the top.
  7. Pour hot jelly into clean, heat-safe jars. Let cool at room temperature until set.
