Ingredients
- 1 cup freshly squeezed lemon juice
- 1 tablespoon finely grated lemon zest
- 1 to 2 fresh jalapeños, finely minced (seeds removed for mild, included for more heat)
- 1 3/4 ounces powdered fruit pectin (1 standard box)
- 1 1/2 cups granulated sugar
- 1/4 cup water
Instructions
- Finely mince jalapeños, adjusting for desired heat level by removing or keeping seeds.
- In a medium saucepan, combine lemon juice, zest, jalapeños, water, and pectin. Stir to dissolve pectin.
- Bring to a rolling boil over medium-high heat, stirring frequently.
- Add sugar all at once and stir until dissolved.
- Return to a rolling boil and cook for 1–2 minutes, stirring constantly until mixture slightly thickens.
- Remove from heat and skim any foam from the top.
- Pour hot jelly into clean, heat-safe jars. Let cool at room temperature until set.
