Description

Loaded steak potato is a hearty skillet meal combining juicy steak cubes, crispy golden potatoes, sautéed onions, and melted cheese—finished with green onions and sour cream for a comforting, flavor-packed dinner.

Ingredients

  • 1 lb steak, cut into bite-size cubes (sirloin or preferred cut)
  • 4 medium potatoes, diced
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil or butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped green onions or chives (optional)
  • 1/2 cup sour cream, for serving (optional)

Instructions

  1. Wash and dice the potatoes into even pieces.
  2. Heat 1 tablespoon oil or butter in a large skillet over medium heat. Cook potatoes with a bit of salt and pepper until golden and tender. Remove and set aside.
  3. In the same skillet, add the remaining oil or butter. Add steak cubes and season with garlic powder, paprika, salt, and black pepper. Cook until browned on all sides.
  4. Add diced onion and cook until soft and fragrant.
  5. Return potatoes to the skillet and gently toss to combine with steak and onions.
  6. Sprinkle cheddar and mozzarella over the top. Cover the skillet and reduce heat until cheese melts.
  7. Top with green onions or chives and serve hot with sour cream if desired.

Notes

  • Use russet or Yukon gold potatoes for best texture.
  • Add jalapeños or red pepper flakes for extra heat.
  • Swap cheeses or add more veggies like bell peppers for variety.
  • Use leftover steak to speed up the recipe.
