Ingredients
- 2 cups fresh broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup almond flour
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Finely chop broccoli florets or pulse in a food processor until rice-sized. Lightly steam for 2–3 minutes, then cool and squeeze out excess moisture using a clean towel.
- In a bowl, combine chopped broccoli, cheddar cheese, almond flour, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Scoop mixture onto the baking sheet and shape into small rounds. Flatten slightly with a spoon.
- Bake for 20–25 minutes, flipping halfway through, until golden and firm.
- Let cool slightly before serving.
Notes
- Use a clean towel to remove as much moisture from the steamed broccoli as possible for best texture.
- Try different cheeses like mozzarella, pepper jack, or Parmesan for variety.
- Great in the air fryer at 360°F for 12–15 minutes, flipping halfway.
