Description

These low carb broccoli cheese rounds are crispy, cheesy, and packed with flavor. Made with simple ingredients like fresh broccoli, almond flour, and cheddar, they’re perfect as a snack, side dish, or light low-carb meal.


Ingredients

  • 2 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup almond flour
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Finely chop broccoli florets or pulse in a food processor until rice-sized. Lightly steam for 2–3 minutes, then cool and squeeze out excess moisture using a clean towel.
  3. In a bowl, combine chopped broccoli, cheddar cheese, almond flour, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Scoop mixture onto the baking sheet and shape into small rounds. Flatten slightly with a spoon.
  5. Bake for 20–25 minutes, flipping halfway through, until golden and firm.
  6. Let cool slightly before serving.

Notes

  • Use a clean towel to remove as much moisture from the steamed broccoli as possible for best texture.
  • Try different cheeses like mozzarella, pepper jack, or Parmesan for variety.
  • Great in the air fryer at 360°F for 12–15 minutes, flipping halfway.
