Ingredients
- 2 ½ pounds sweet potatoes (about 5 medium), peeled if desired and cut into 1-inch cubes
- ½ cup pure maple syrup
- 2 tablespoons coconut oil, melted
- 1 teaspoon ground cinnamon
- ½ teaspoon kosher salt
- ½ cup chopped pecans (optional)
- 1 teaspoon fresh lemon juice (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large baking dish, combine sweet potato cubes with maple syrup, melted coconut oil, cinnamon, and salt. Toss to coat evenly.
- Bake uncovered for 20 minutes, then stir to redistribute glaze.
- Continue roasting for 30–40 more minutes, stirring every 15 minutes, until sweet potatoes are tender and lightly caramelized.
- Stir in chopped pecans if using, and drizzle with lemon juice for brightness.
- Serve warm as a side dish.
Notes
- Add a pinch of nutmeg or ginger for extra warmth.
- Swap coconut oil with butter for a richer taste.
- Roast with thyme during the final 15 minutes for a savory touch.
- To caramelize well, avoid overcrowding the dish and ensure oven is fully preheated.
