Description

Ingredients

  • 4 boneless, skinless chicken breasts (about pounds)
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped (drained if oil-packed)
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon Italian seasoning (or mix of oregano and thyme)
  • ¼ teaspoon crushed red pepper flakes (optional)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon freshly ground black pepper (or to taste)
  • ¼ cup fresh basil, chopped (for garnish)

Instructions

  1. Season chicken with salt, pepper, and half the Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden (about 4–5 minutes per side). Remove from skillet and set aside.
  3. Add minced garlic to the pan and sauté until fragrant, about 1 minute.
  4. Pour in chicken broth, scraping up browned bits. Stir in cream, sun-dried tomatoes, remaining seasoning, red pepper flakes (if using), and Parmesan. Stir until smooth and slightly thickened.
  5. Return chicken to skillet. Reduce heat to medium-low, cover, and simmer for about 10 minutes or until chicken is cooked through and sauce is thickened.
  6. Stir in chopped basil. Serve hot with extra sauce spooned over the chicken.

Notes

  • Do not substitute milk for heavy cream — it will thin the sauce too much.
  • Sun-dried tomatoes add unique flavor; substitute with lemon juice for brightness if omitted.
  • Serve with pasta, rice, mashed potatoes, or vegetables.
  • Store leftovers in the fridge up to 3 days. Reheat gently with added liquid if needed.
