Description

This Steak, Avocado, and Roasted Corn Bowl with Cilantro Cream Sauce combines smoky grilled steak, sweet roasted corn, creamy avocado, and zesty cherry tomatoes, all drizzled with a refreshing cilantro cream sauce. Ingredients

1 lb steak (flank or sirloin)

2 tablespoons olive oil

Salt, to taste

Pepper, to taste

2 cups corn kernels (fresh or frozen)

1 teaspoon chili powder

1 teaspoon cumin

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 cup cooked quinoa or rice (optional)

1 lime, juiced

Fresh cilantro, for garnish

For the cilantro cream sauce:

1/2 cup sour cream

1/4 cup mayonnaise

1/2 cup fresh cilantro leaves

1 lime, juiced

1 clove garlic, minced


Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. Brush steak with olive oil, season with salt and pepper, and grill 5–7 minutes per side to desired doneness. Rest 5 minutes, then slice thinly against the grain.
  3. Spread corn on a baking sheet, drizzle with olive oil, and sprinkle with chili powder and cumin. Roast at 400°F (200°C) for 15 minutes until slightly charred.
  4. Blend sour cream, mayonnaise, cilantro, lime juice, and garlic until smooth. Season with salt and pepper.
  5. Build bowls with quinoa or rice (if using), steak, roasted corn, avocado, and cherry tomatoes.
  6. Drizzle with cilantro cream sauce, garnish with cilantro, and add a squeeze of lime juice before serving.
