Ingredients
1 lb steak (flank or sirloin)
2 tablespoons olive oil
Salt, to taste
Pepper, to taste
2 cups corn kernels (fresh or frozen)
1 teaspoon chili powder
1 teaspoon cumin
1 ripe avocado, diced
1 cup cherry tomatoes, halved
1 cup cooked quinoa or rice (optional)
1 lime, juiced
Fresh cilantro, for garnish
For the cilantro cream sauce:
1/2 cup sour cream
1/4 cup mayonnaise
1/2 cup fresh cilantro leaves
1 lime, juiced
1 clove garlic, minced
Instructions
- Preheat grill or grill pan over medium-high heat.
- Brush steak with olive oil, season with salt and pepper, and grill 5–7 minutes per side to desired doneness. Rest 5 minutes, then slice thinly against the grain.
- Spread corn on a baking sheet, drizzle with olive oil, and sprinkle with chili powder and cumin. Roast at 400°F (200°C) for 15 minutes until slightly charred.
- Blend sour cream, mayonnaise, cilantro, lime juice, and garlic until smooth. Season with salt and pepper.
- Build bowls with quinoa or rice (if using), steak, roasted corn, avocado, and cherry tomatoes.
- Drizzle with cilantro cream sauce, garnish with cilantro, and add a squeeze of lime juice before serving.
