Description

A hearty grilled cheese sandwich layered with juicy homemade meatloaf and melted pepper jack cheese between buttery toasted bread for the ultimate comfort-food meal.


Ingredients

  • 1 pound ground beef
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 tablespoon mustard
  • 1 tablespoon ketchup
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 slices sandwich bread
  • 4 slices pepper jack cheese
  • 2 tablespoons butter, softened
  • 2 tablespoons mayonnaise (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl combine ground beef, egg, breadcrumbs, mustard, ketchup, garlic powder, onion powder, salt, and black pepper. Mix gently until just combined.
  3. Shape the mixture into a loaf and place it on a lined baking sheet or small baking dish.
  4. Bake for 35–40 minutes until fully cooked and the internal temperature reaches 160°F (71°C).
  5. Let the meatloaf rest for 5–10 minutes, then slice into thick sandwich portions.
  6. Butter one side of each slice of bread. Spread a thin layer of mayonnaise on the other side if desired.
  7. Place one slice of bread butter-side down in a skillet over medium heat.
  8. Add one slice of pepper jack cheese, a slice of meatloaf, another slice of cheese, and top with another slice of bread butter-side up.
  9. Cook for 3–4 minutes per side until the bread is golden brown and the cheese is melted.
  10. Remove from the skillet, let rest briefly, slice, and serve warm.

Notes

  • Leftover meatloaf works perfectly for this sandwich.
  • Cook the sandwich over medium or medium-low heat so the cheese melts before the bread burns.
  • Using mayonnaise along with butter can create an extra crispy crust.
