Ingredients
1 beef Chuck Steak (about 1 pound)
2 teaspoons Mediterranean Spice Mix
2 zucchini, cut lengthwise
8 baby sweet bell peppers
1 teaspoon olive oil
Marinade:
2/3 cup balsamic vinegar
2/3 cup olive oil
1 tablespoon Mediterranean spice mix
Instructions
- Combine marinade ingredients in a small bowl.
- Place chuck steak and marinade in a food-safe plastic bag; turn to coat evenly. Seal and refrigerate 6 hours or overnight, turning occasionally.
- Toss zucchini and bell peppers with olive oil.
- Grill vegetables over medium heat 3–5 minutes per side until tender. Remove and slice zucchini into 1/4-inch slices.
- Remove steak from marinade and discard marinade. Season each side with 1/2 tablespoon Mediterranean spice mix.
- Grill steak over medium heat for 3–4 minutes per side for medium-rare to medium doneness, turning occasionally.
- Remove steak from grill, season with salt to taste, and serve with grilled vegetables.
