Description

Tender and flavorful Mediterranean grilled chuck roast marinated in a vibrant spice and balsamic vinegar blend, served with fresh grilled zucchini and sweet bell peppers.


Ingredients

1 beef Chuck Steak (about 1 pound)

2 teaspoons Mediterranean Spice Mix

2 zucchini, cut lengthwise

8 baby sweet bell peppers

1 teaspoon olive oil

Marinade:

2/3 cup balsamic vinegar

2/3 cup olive oil

1 tablespoon Mediterranean spice mix


Instructions

  1. Combine marinade ingredients in a small bowl.
  2. Place chuck steak and marinade in a food-safe plastic bag; turn to coat evenly. Seal and refrigerate 6 hours or overnight, turning occasionally.
  3. Toss zucchini and bell peppers with olive oil.
  4. Grill vegetables over medium heat 3–5 minutes per side until tender. Remove and slice zucchini into 1/4-inch slices.
  5. Remove steak from marinade and discard marinade. Season each side with 1/2 tablespoon Mediterranean spice mix.
  6. Grill steak over medium heat for 3–4 minutes per side for medium-rare to medium doneness, turning occasionally.
  7. Remove steak from grill, season with salt to taste, and serve with grilled vegetables.
