Description

These Mediterranean Pinwheels are colorful, fresh tortilla roll-ups filled with hummus, feta, crisp veggies, and herbs. They make a quick, no-cook appetizer or lunch that’s packed with flavor and texture.


Ingredients

  • 4 large flour tortillas (10-inch)
  • 1/2 cup hummus (classic or roasted red pepper)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup diced cucumber
  • 1/2 cup chopped cherry tomatoes
  • 1/4 cup chopped Kalamata olives
  • 1/4 cup finely diced red bell pepper
  • 2 tablespoons minced red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Spread hummus evenly over each tortilla, covering the entire surface.
  2. Sprinkle with feta, cucumber, tomatoes, olives, bell pepper, red onion, and parsley.
  3. Drizzle with olive oil and season with oregano, salt, and pepper.
  4. Roll each tortilla tightly and chill for 10 minutes.
