Description

Million Dollar Soup is a rich and creamy chicken soup loaded with tender shredded chicken, potatoes, vegetables, and melted cheddar and parmesan cheese in a comforting, flavorful broth.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken breast
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large soup pot over medium heat and cook the diced onion for about 5 minutes until softened.
  2. Add the minced garlic, diced carrots, and celery and cook for 3–4 minutes until slightly softened.
  3. Add the butter and allow it to melt, then sprinkle the flour over the vegetables and stir for about 2 minutes to form a roux.
  4. Gradually whisk in the chicken broth until smooth and bring the mixture to a gentle simmer.
  5. Add the diced potatoes, shredded chicken, salt, pepper, thyme, and paprika.
  6. Simmer for 15–20 minutes until the potatoes are tender.
  7. Reduce heat to low and slowly stir in the heavy cream.
  8. Add the cheddar and parmesan cheese and stir until completely melted and the soup is smooth and creamy.
  9. Taste and adjust seasoning if needed.
  10. Garnish with fresh parsley and serve warm.

Notes

  • Use shredded rotisserie chicken to save preparation time.
  • Add corn, peas, or spinach for extra vegetables.
  • For a spicier version add a pinch of cayenne pepper or crushed red pepper flakes.
  • Blend one cup of soup and return it to the pot for an extra creamy texture.
