Description

This Mini Banana Bread is a cozy, single-serving treat that bakes up moist, fluffy, and full of banana flavor in just 25 minutes. With optional chocolate chips and walnuts, it’s the perfect no-fuss dessert or snack for one or two.


Ingredients

  • 2 tablespoons + 2 teaspoons (35 g) unsalted butter
  • ¼ cup (55 g) mashed ripe banana
  • 1 tablespoon + 2 teaspoons (25 ml) whole milk
  • 2 tablespoons (25 g) light brown sugar
  • 2 tablespoons (25 g) granulated sugar
  • ¼ teaspoon vanilla extract
  • 2 tablespoons + 2 teaspoons (40 g) cream cheese
  • ¼ cup + 3 tablespoons (70 g) all-purpose flour
  • ¼ teaspoon baking soda
  • ⅛ teaspoon baking powder
  • ⅛ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • ⅛ cup (15 g) chopped walnuts (optional)
  • 3 tablespoons + 2 teaspoons (40 g) dark chocolate chips or chopped dark chocolate
  • Extra chocolate chips for topping

Instructions

  1. Preheat oven to 350°F (180°C) and grease two ramekins or small baking dishes.
  2. Melt butter in a bowl in the microwave in 20-second intervals, stirring in between.
  3. Add mashed banana and milk to the butter and mix until combined.
  4. Stir in brown sugar, granulated sugar, cream cheese, and vanilla extract until smooth.
  5. In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
  6. Gently fold dry ingredients into the wet mixture until just combined.
  7. Stir in chocolate chips and walnuts if using.
  8. Divide batter evenly between prepared ramekins. Bake for 15 minutes.
  9. Top with extra chocolate chips, then bake another 10 minutes.
  10. Let cool slightly before serving.
