Ingredients
- 4 bananas, sliced into ⅓-inch medallions
- 1 cup oat or almond milk (or regular milk)
- 2 tablespoons maple syrup
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 1 cup all-purpose flour or gluten-free flour
- 2 tablespoons butter (regular or vegan), for frying
Instructions
- Slice bananas into ⅓-inch medallions.
- In a bowl, whisk together milk, maple syrup, baking powder, vanilla, and cinnamon. Stir in flour until smooth batter forms.
- Heat skillet over medium heat and melt about ½ tablespoon butter.
- Dip banana slices into batter and place on skillet, spacing them apart.
- Cook until golden brown, flip, and cook the other side until crisp and golden.
- Transfer to a paper towel-lined plate. Repeat with remaining slices.
- Serve warm with maple syrup or powdered sugar.
