Description

Mini chicken meatloaf is a healthy and flavorful twist on the classic comfort food. These single-serve loaves are quick to bake, easy to portion, and perfect for weeknight dinners or meal prep.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, milk, egg, onion, garlic, Worcestershire sauce, oregano, basil, salt, and pepper. Mix until just combined.
  3. Shape into 4–6 small loaves and place on the prepared baking sheet.
  4. In a small bowl, mix ketchup and brown sugar. Spoon the glaze over each mini meatloaf.
  5. Bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Remove from oven and let rest a few minutes before serving.

  • Add grated carrots or spinach for extra nutrition.
  • Use gluten-free breadcrumbs or almond flour for dietary needs.
  • Store leftovers in the fridge for up to 4 days or freeze for 3 months.
