Description

These Mint Brownies feature a rich, fudgy chocolate base topped with cool, creamy mint frosting and a smooth chocolate glaze. Perfect for holidays, parties, or anytime you want a decadent dessert with a refreshing twist.


Ingredients

  • Brownie Layer:
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • Mint Frosting:
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tbsp milk or cream
  • 1/2 tsp peppermint extract
  • 12 drops green food coloring (optional)
  • Chocolate Topping:
  • 3/4 cup semi-sweet chocolate chips
  • 3 tbsp unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment or grease lightly.
  2. Mix melted butter, sugar, eggs, and vanilla in a bowl until smooth.
  3. Stir in flour, cocoa powder, and salt until just combined.
  4. Pour batter into pan and spread evenly. Bake for 25–30 minutes, until a toothpick comes out with moist crumbs.
  5. Let brownies cool completely before frosting.
  6. Make mint frosting: beat butter, powdered sugar, milk, peppermint extract, and food coloring until fluffy. Spread over cooled brownies.
  7. Melt chocolate chips and butter for the topping. Cool slightly, then pour over mint layer and spread evenly.
  8. Chill in fridge for 30–45 minutes until set. Slice and serve.
